Charred citrus is my current go to (current as in, for the last five years). I love amping up the umami of a dish by merely grilling my citrus before juicing it. It adds flavor, body, bitterness and most of all a deep warm sweetness that you have to taste to believe. Try this out in salad dressings, pasta dishes, or over any grilled meat or fish.

-citrus of your choice; cut in half

Preheat grill to high. Place citrus, cut side down on grill for about five minutes until charred and juicy. Squeeze out juice into bowl and reserve to use in any recipe!
